Seeing Green Salad

Spring is the green season! Adding more green to your diet is very healthy and vitalizing. When you eat raw green foods, you will feel like you have been charged with energy! 
Below is a recipe that is very easy to assemble and makes a great lunch or dinner. Be creative, and adapt the recipe to suit your tastes!

Seeing Green Salad

~3/4 cup fresh parsley sprigs
~1/3 cup mayonnaise (I used Vegenaise)
~1/3 cup plain yogurt
~1 green onion, chopped OR 1/2 teaspoon onion powder
~1 tablespoon apple cider vinegar
~1/4 teaspoon dried basil
~1/8 teaspoon garlic powder
~1 tablespoon water
~your choice of dark green lettuce leaves, torn
~1 cucumber, thinly sliced
~1/4 cup fresh mint, chopped

1. Place the first eight ingredients in a blender or food processor. Blend until smooth.
2. Place the salad greens, cucumber, and mint on a plate. Pour dressing over greens.
3. Enjoy eating a totally green salad, and soon you will be seeing green!
