Chicken salad is the perfect lunch on a hot summer day. When I think of chicken salad, it reminds me of many wonderful lunches and dinners shared with my mom, eating her delicious chicken salad.
Here is Mom's famous chicken salad recipe.
-4 cups chopped, cooked chicken
-1 cup halved seedless green or red grapes
-1 cup slivered almonds, toasted
-1 bunch of green onions, chopped
-3/4 cup mayonnaise (or egg-free mayonnaise)
-1/2 cup sour cream*
-1/2 teaspoon sea salt
Combine all ingredients and chill. Serve to your family and friends with love.
*Instead of 1/2 cup sour cream, I use 1/2 cup of egg-free mayonnaise.
