Double Chocolate Muffins

{Gluten and Dairy Free}

These muffins make a wonderful dessert for the chocolate lover!

~1 1/3 cup warm water
~1/4 cup grapeseed oil or olive oil
~1/2 cup agave or maple syrup
~1/2 cup applesauce
~2 teaspoons apple cider vinegar
~1/3 cup ground flax seeds
~1 cup brown rice flour
~3/4 cups teff flour or almond flour
~1/3 cup cocoa powder
~2 teaspoons baking powder
~1/2 teaspoon sea salt
~1/2 cup dairy free chocolate or carob chips

1.Combine the first 6 ingredients together in a large mixing bowl.
2.Combine remaining ingredients except for chocolate chips in a separate bowl.
3.Combine wet and dry ingredients briefly, then fold in chocolate chips. Do not over-mix, as this will result in dry muffins.
4.Scoop batter into muffin cups and bake at 400 degrees for 20 minutes.
